apple + cinnamon muffins

1/2 cup apple puree
1 apple, grated
1/2 cup Greek yoghurt
2 eggs
1/4 cup maple syrup
2 teaspoons vanilla extract
1/2 cup olive oil
1 cup almond flour
1 cup buckwheat flour
1 teaspoon baking powder
1 teaspoon cinnamon
SERVING SIZE (12 large muffins) | Suitable for 9mo +
Preheat oven to 180 deg fan forced
Grease muffin pan with olive oil
Mix together wet ingredients
Add dry ingredients
Bake for 15 minutes
NOTE: If wanting to make egg free, sub 2 eggs with 1/2 cup carbonated water
If wanting to make nut free, replace 1 cup of almond flour with 3/4 cup buckwheat flour
