banana bread

3 mashed bananas
2 eggs
1/4 cup maple syrup
2 teaspoons vanilla extract
1/2 cup melted coconut oil or butter
1 cup almond flour
1 cup buckwheat flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
+ added (choc chip, raspberries, blueberries)
SERVING SIZE (12 SLICES) | Suitable from 6mo/starting solids (see below)
6mo+: serve in finger length strips
9mo+/established chew and swallow: serve in bite sized pieces
Preheat oven to 180 deg fan forced
Grease loaf tin with olive oil
Mix together wet ingredients
Add dry ingredients
Fold in any optional additions
Bake for 40 minutes
NOTE: If wanting to make egg free, sub for 1/2 cup of carbonated water
This recipe works really well as muffins too. If making muffins, bake for 15 minutes. If needing these to be nut free, omit almond flour and use 1.5 cups of buckwheat flour instead.
