blueberry muffins

1 cup almond flour
1 cup buckwheat flour
1 tsp baking powder
2 eggs (1/2 cup carbonated water)
½ cup unsweetened apple puree
½ cup honey or maple syrup
¼ cup olive oil
1 tsp vanilla essence
1 cup frozen blueberries
SERVING SIZE (10-12 muffins) | Suitable for 9mo +
Preheat oven to 180 deg
Combine wet ingredients in a bowl
Add dry ingredients and mix well
Add blueberries
Spoon into muffin tray
Bake for 25 minutes
NOTE: If wanting to make egg free, sub 2 eggs with 1/2 cup carbonated water
If wanting to make nut free, replace 1 cup of almond flour with 3/4 cup buckwheat flour
