veggie quinoa bites

1/2 cup uncooked quinoa

1/2 cup grated cheese

1/2 zucchini, grated

1/2 cup pumpkin, cooked + mashed

3 x broccoli florets, cooked + diced

2 tbs flour

1 egg (2x flax egg)

1 tsp oregano

1/2 tsp garlic powder

Breadcrumbs

SERVING SIZE (10 bites) | Suitable from 6mo

6mo+: Serve whole

9mo+/established on finger foods: Cut into bite sized pieces

Pre-heat oven to 180 deg

Cook quinoa with 1 cup water, over low heat for 10-15 minutes or until water as absorbed

Combine ingredients, except breadcrumbs

Form into balls/nuggets

Coat in breadcrumbs

Place in oven for 15 minutes, until exterior is crunchy, turning half way through

NOTE: If wanting to make egg free, add 2 x flax egg (2tbs flaxseed + 5tbs water, allow to sit until paste formed). If wanting to make dairy free, omit cheese.
