Gingerbread people

GINGERBREAD

1 cup of plain flour (gluten free works here too)

½ tsp baking powder

2 tsp ginger powder

½ tsp cinnamon

¼ tsp nutmeg

2 tbs milk of choice

2 tbs maple syrup

1 tbs molasses

½ tsp vanilla essence

¼ cup melted unsalted butter (or nuttelex)

SERVING SIZE - makes 12-16 biscuits | Suitable from 9-12mo

 

Preheat oven to 180 degrees

Mix dry ingredients together

Add wet ingredients

Mix until well combined

Roll into a ball, wrap in cling film and place in the fridge for 30 minutes

Roll out to 0.5cm thick sheet

Use cookie cutter to cut out desired shape

Place on baking paper lined tray

Bake for 10 minutes

ROYAL ICING

3 tbs aquafaba (chickpea water)

¼ tsp lemon juice

1/8 tsp vanilla essence

350 g icing sugar

Place aquafaba, lemon juice and vanilla essence in a bowl and mix with an electric mixer until a foam forms

Add half the icing sugar and mix until a thick paste forms

Add rest of icing sugar and mix for 5-10 minutes, until a glue-like consistency is reached (smooth and holds form)

You may need to add water to create a smoother/wetter consistency – add in ½ tsp increments
