1 onion, finely diced

2 tsp garlic

1 tbs ginger

1 carrot, grated

1 zucchini, grated

1 tsp cumin seeds

1 tsp ground cumin

1 tsp ground coriander

2 tsp mustard seeds

2 tsp garam marsala

1 tsp turmeric

1 x tin tomato

200g of dried red lentils

1 x can coconut milk

350 ml vegetable stock

NOTE: If wanting to serve from 6mo, you may want to blitz until slightly more puree like, and flatten rice with the back of a fork

Sauté onion, garlic and ginger in olive oil

Add carrot, zucchini, lentils, coconut milk, tomatoes and stock

Simmer for 15-20 minutes

Serve with rice
