slow cooked chilli con carne

2 kg beef chuck roast

2 tsp crushed garlic

2 onions, diced

1 capsicum, diced

1/2 cup water

2 x tin kidney beans

2 x tins crushed tomato

1/4 cup salt reduced tomato paste

1 cup salt reduced beef stock

1 tbs cumin

1tbs onion powder

1 tbs garlic powder

1 tbs oregano

1 tbs smoked paprika

SERVING SIZE (FAMILY X 8) | Suitable as above for 9mo + or pork less shredded/in big pieces from 6mo/starting solids

Cut the beef into three to four equal peices

Brown beef in a pan with some olive oil

Add some extra olive oil to the pan and saute the onion, garlic and capsicum for approx 2-3 minutes

Add 1/2 cup water and bring to a simmer for 30 sec, then scrape into slow cooker

In the slow cooker, add beans, tomatoes, tomato paste, beef stock and spices, stir then add pieces of beef

Cook on low for 8 hours

Once cooked, shred with two forks

If the sauce needs thickening, mix 2 tsp of corn flour with 2 tbs water and add to slow cooker and slow cook for a further 20 min
