pulled pork jacket potato

1.5 kg pork shoulder, cut in half

3 tbs paprika

1/2 tsp cayenne pepper

1 tsp garlic powder

1/2 tsp dried thyme

1/2 cup maple syrup

1/4 red wine vinegar

3 tbs olive oil

1 onion, peeled and cut in half

Potato, roasted

Pre packaged coleslaw (or grated carrot, red + white cabbage)

SERVING SIZE (FAMILY X 8) | Suitable as above for 9mo + or pork less shredded/in big pieces from 6mo/starting solids

Mix together spices, maple syrup, vinegar and olive oil

Place the onion in the bottom of a pressure cooker or slow cooker and top with pork

Pour spice mix over the top

Turn the slow cooker onto low and cook for 7-8 hours, or pressure cook for 1 hour.

Shred once cooked

Remove baked potato from oven, removing skin for your baby’s portion

Fluff potato and top with slaw and pork

Adults + toddlers: dress slaw in 2 tbs apple cider vinegar, 2 tbs olive oil, 2 tbs honey and 1 tbs lime juice
