corn fritters

1 x tin of corn

¼ red onion

¼ cup coriander

½ cup flour

1 tsp baking powder

2 eggs (or ¼ cup of milk)

6mo: Serve in fingers

9mo/well established on finger foods: Serve in bite sized pieces

Place 1 cup of corn with eggs (or milk) in a blender and create a chunky batter

Add the flour and baking powder and pulse to combine

Mix through the red onion, coriander and remaining corn kernels

Heat a fry pan with olive oil

Scoop a heaped tablespoon of batter into the pan and cook for a few minutes each side until golden brown

NOTE: Freezer friendly
